KNOLLBURY FORT

A few years ago I started Hawkstone, partly to support British farming and partly because I wanted to make a British lager that actually tasted of something. And having sorted out beer, I realised that Britain had become rather good at growing grapes and making wine with them. As in, genuinely, world-beatingly good. It was time for Hawkstone to have a sister. Or a cousin. I haven’t quite worked out the grain and grapes relationship. The point is, we make wine now. It’s called Knollbury Fort and it is superb. I know, I would say that. But it’s our house wine at The Farmer’s Dog so you can order it for yourself in order to find out how right I am.

From the second you glimpse this crimson wonder catching the light and get a hint of its vibrant red berry aroma, you’ll know it’s going to take you through lanes lined with loganberry, raspberry and dark cherry, and a tiny hint of oak. Well, this is an English wine after all. In fact, it’s created in the Crouch Valley in Essex, one of the finest places in England to grow high quality grapes. Drink it now, or let it age for three to five years. Either way, it’s fabulous.

Imagine mixing honeysuckle, white peaches, greengages and Golden Delicious apples. An unusual smoothie, but an absolutely brilliant combo to hit your nose and your tongue as this clear, smooth and sophisticated wine proves. It’s made exclusively with grapes grown across Kent, Essex and Suffolk (specifically Pinot Blanc, Pinot Gris and a little Chardonnay) and inspired by the whites of Northern Italy. But this also has a distinct and delightful character that is uniquely and brilliantly English.

Our dry, ruby-tinged rosé is a wonderful temptress, making coy nods at your nose with hints of wild strawberry and raspberry before flattering your tongue with hints of ripe berries, red apples and a glorious richness that makes paler wines from other regions seem boring. This proudly English rosé is made with fruit exclusively from Kent, specifically from five carefully selected vineyards supplying Pinot Noir grapes, with a little bit of Chardonnay and Pinot Meunier, in a blend that shows off the glory of modern English wine making. In case you thought the Garden of England was just full of flowers.
