A prime roasting joint made from locally sourced, 28-day dry-aged beef from our cooperative of farmers. Rolled by our butchers and ready for the oven, it represents the best of British beef and makes a very convincing Christmas centrepiece. The difficult bit is stopping people picking at it before it reaches the table.
